Tinga

Tinga is a traditional Mexican dish. It is super delicious and a favorite of all that have tried it.  This is the version my mother in law taught me how to make. The best part is that it is gluten free. It's a great dish to serve at a party.

Ingredients:

4 large chicken breasts
2 onions
2 small cans tomato sauce
1 can chiles in adobo (make sure it's gluten free)
Oil
Tostadas
Sour cream
Queso Fresco (mexican cheese, can be found at most walmarts)


1.Boil chicken until it is completely done

2.Cut onions into rings and saute in oil on  medium skillet until they are clear

3. Add two or three chiles in adobo and mash them in the skillet with the onions'

4. Add the tomato sauce and reduce the heat stiring occasionally

5. When the chicken is done shred it and add to the onion and chiles

6. Add a little water from the chicken to the onions, chicken and chiles and let it simmer until most of the sauce has cooked down.

Serve the tinga on tostadas and top with cheese and sour cream.
