Mexican Independence Day

We are getting ready to celebrate Mexican Independence Day, the great thing about that is time spent with friends and all the great gluten free food!!!   I mean could we be in a better place for awesome gluten free food? One very simple gluten free food is Elotes.  Elote means corn, but this corn has gluten free mayonaise, gluten free queso fresco (shredded white cheese), and chili powder.  It is very easy to make, you just boil the corn then top with mayo, cheese, and chili to your taste.  It is a great snack and I never have to wonder if it's ok for my son.  You can make it dairy free, just add some gluten free/dairy free shredded cheese.

Quesadillas are very good as well and super easy to make.  You need corn or other gluten free tortillas, gluten free cheese (soy or other dairy free cheese works too), oil, sour cream and salsa.   Just heat the tortillas one at a time on both sides and then add cheese.  Heat until the cheese is melted.  Serve with salsa (most are gluten free) and sour cream. (obmit if you need dairy free) I am amazed at how being gluten free can be so simple.  We have to just focus on what the gluten intolerant people in our lives can have.

To go with your Quesadillas, you can make a simple Salsa Verde. (green salsa)  I usually use 8 tomatillos, 2 serrano peppers (use 1 for a less spicy salsa), and a clove of garlic chopped. Blend all ingredients in a blender add salt to taste. When it is all blended add a diced avacado and just pulse it a few times to leave it in little pieces. This salsa is simple and tastes great. Don't forget to wash all produce beforehand.
