Quick Quiches

  I am always looking for recipes that are healthy and that meet all of the dietary needs for my whole family.  It helps if they are budget friendly as well.  I have been experimenting with quiches lately and I just wanted to share what I have been up to.


Super Cheesy Quiche
 Spanish Sausage Quiche

Super Cheesy Quiche
Layer these ingredients in a 13 x 9 greased baking pan:

1/2 cup onion diced
1/2 cup mozerella (or other white cheese can be soy as well)
1/2 cup oaxaca cheese (also can be dairy free)
1/2 a block of cream cheese cut into cubes (I think soy sour cream would be a good substitue if dairy is not an option)
Beat together and pour into pan:
6 eggs
3 cups milk (soy, goat, dairy, etc.)
1 tsp salt
dash of pepper

Bake @ 375 (190C) for 45 to 55 minutes until knife inserted in the center comes out clean.
Cool 5 minutes before serving.


 Spanish Sausage Quiche
 Layer ingredients in a greased pie dish:

1/2 cup chopped onion
1 cup chopped spanish sausage (it's called chorizo, if this is not available used other gluten free sausage)
1 cup grated cheese (substitute soy or other dairy free cheese if needed)
Beat together and pour into pie plate:
3 eggs
1 1/2 cups milk (again, any type of milk should work if dairy is not tolerated)
1/2 tsp salt
dash pepper
Bake @ 375 degrees (190 C) for 45-50 minutes or until a knife inserted in the center comes out clean. Cool 5 minutes before serving.

As you can see, I doubled the recipe for the first quiche.  Additional baking time might be required.  The great thing about these recipes is you can add and substitute ingredients as needed.  Some additonal or optional ingredients include: mushrooms, green peppers, bacon, ham, sausage, zucchini or chopped spinach.  This recipe is very versitile and inexpensive. It was a big hit at our house. And completely gluten free.
